Happy Birthday Mack!

Mack turned 2 years old on Friday, April 17, 2009. I cannot thank God enough for every minute that He gives me with this amazing little boy. Some people will say that their glass is half empty and some will say that it is half full, but I say that mine is overflowing, and it has been ever since this love came into my life. There are no words to describe how I feel when he runs to me, puts both hands on my cheeks, and says "a mama shug (sugar)" and then plants a big wet one right on my mouth. I am so fortunate and blessed that God chose me to be Mack's mom. Happy Birthday to the sweetest most loving child. Cooper is 3 months



Cooper turned 3 months this week. It was his first week at daycare and mama's first week back to work. I think the first day was probably harder for me than it was for Coop. Mack is taking very good care of him at daycare. He tells everyone "my poop" when they ask him whose baby coop is. And, yes I know you are laughing but that is what he calls him, "poop" or "pooper". I hope it eventually changes. We are all so in love with this little man and cannot believe he is growing and changing so fast. I feel like everytime I blink my eyes life hits fast forward.

Very Ritzy Italian Chicken

Brian and I found this chicken recipe and we absolutely love it. I've been telling my mom I was gonna share it with her, so i thought I would share it with everyone. It is super easy, my son loves it, and it is so delicious! Hope you all enjoy but beware this is not for those of you dieting unless you want a splurge!

Very Ritzy Italian Chicken

3 whole chicken breast
2 eggs
1 cup seasoned bread crumbs ( or regular and you can season yourself)
3 tablespoons of olive oil
3 slices of mozzerella cheese (or 1 slice per piece of chicken)
1 pint of heavy cream
1 cup grated parmesan cheese
2 tablespoons chopped parsley
salt and pepper to taste

preheat oven to 350.
dip chicken in eggs. place the bread crumbs in a shallow bowl; coat the chicken in the bread crumbs. In a large skillet, heat the oil until moderately hot. Place the chicken in the frying pan andd brown ligthly on both sides. Remove from pan and place in a baking dish. Top each breast with a slice of mozzerella cheese. In a saucepan, mix together the heavy cream, parmesan cheese, parsley, salt and pepper. cook until mixture is hot and has thickened a bit. Pour over the chicken and bake for 45 minutes.

My New Hobby

Okay, I know what your thinking; "Like she needs a new hobby!" Yes, I agree two kids under the age of two, a full time job, and junior auxiliary duties just aren't enough. I need something else. Last April I got my first sewing machine, and in the fall I took my first sewing class, and then I was hooked! First, because you would flip your lid if you knew how inexpensively you could make your own kids clothes, second because you get tired of your kid looking like everyone eleses on the block, and third because sometimes you just need a creative outlet. Sew, I cannot get enough of the blogs that stay-at-home moms have started to support their craft and their choice to be at home with their children. Wish I could do the same, but my husband would not begin to hear of that idea! I added a link list to some of the cute blogs. Check them out and support these women!
